INSTRUCTIONS
The first step in making this soup is to melt the butter in a large pot or Dutch oven over medium heat.
When the butter melts, add the chopped onion and fry until translucent. The onion will turn transparent and opaque after about 4-5 minutes. Then turn off the burner but leave the pot in place.
Add chopped garlic and mix with onion for 1 minute. Even if the stove is off, the pot will still be hot enough for the garlic to smell.
Then, transfer the onion and garlic mixture to a bowl and set aside.
After frying the onion, turn off the heat and add the garlic. The heat from the pan brings out all the flavors of the garlic without the bitterness.
Add the remaining butter to the same pot where the onion and garlic were and let it melt over medium heat.
Then add the flour and continue cooking over medium heat for about 3 to 5 minutes, stirring constantly, until the flour is absorbed and the mixture thickens.
Slowly pour the chicken broth into the pan and beat until no more lumps of flour are visible. Then slowly pour in half and half and beat until well combined.
Half and half is what makes this broccoli cheddar soup so creamy. However, whole or 2% milk can be used instead if desired.
